The life of the flour is one year when kept in a cool dry place. The life will be extended indefinitely if kept in the refrigerator or freezer. If you do keep it there it is a good idea to place it into a sealed plastic bag (like a zip lock) which will help keep moisture from forming as a result of the cold. In fact it is a good idea to keep the flour sealed just because of humidity changes. If the flour is cold or frozen, let it come to room temperature before using it in a recipe.
The flour is blended in a dedicated gluten free facility. Many allergenic foods are gluten free and therefore can be present in the facility. We are assured that the equipment is cleaned after each mixing procedure. However, humans do make mistakes.
